FARJAS WOOD-BURNING OVENS
Farjas Manufacturers take pride in the craftsmanship of these ovens. The indirect flame oven provides simultaneous cooking and even heating continuously throughout the entire product area. The fire and gas chambers are completely independent and isolated from the airtight cooking chamber. The cooking base or hearth rotates allowing the whole product to pass in front of the loading/unloading door; this not only results in even cooking but also makes it easier to handle by a single person.
Indirect flame ovens are available in Rustic (Masonry) and Metal models.
With the direct flame oven the combustion occurs in a furnace or open fire to the cooking chamber, which therefore directly receives both the combustion gases and the fire. The cyclic baking process allows the oven to heat and rest at intervals. This oven is especially indicated for baking traditional bread, such as: large round loaves, and any large-sized products. It is also well accepted in the restaurants and rotisseries, etc.
Direct flame ovens are available in Fixed Hearth and Rotating Hearth models.
